Not only will there be a truly Amazing Wall of Lettuce, Henry is putting some of his favorite lettuces, the “Gem-style” ones -- ON SALE!
Henry has been experimenting with the “Little Gem” types of lettuce which are, in his words, “super-small, super-dense, super-crisp, and super-hard to get to market without cracking.”
They are also super sweet, crisp, and delicious! While they are on the small side, they are very hefty, easily the weight of a much larger, fluffier head of lettuce.
Henry is bringing up quite a few varieties of these three basic types, all of which most likely originated with the heirloom Amish Deer Tongue lettuce, which dates back to the mid-1700s.

Henry’s compact “Gem-style” lettuces are small but hefty, weighing as much as “regular” lettuces 2 or 3 times larger.
